- 1 15-ounce can unsalted chickpeas, rinsed and drained
- 1-1/2 cups shredded carrots
- 1 Tbsp olive oil mixed with 1/4 cumin and a dash of cinnamon
- 1/4 cup thinly sliced dates
- 1/2 cup fresh cilantro
- 2 Tbsp dry-roasted pistachios
- 1/4 tsp kosher salt
Mix it all together, and eat!
